Don’t worry it works just as well as muffins. These gluten-free and dairy-free pumpkin bars have minimal ingredients and are refined-sugar-free for a healthy snack or dessert.

Grain-Free Pumpkin Snacking Bars are made with:
- Pumpkin: make sure to use pumpkin puree and not pumpkin pie filling
- Almond flour: keeping these grain-free and gluten-free with almond flour
- Egg: two eggs, I have not tried these with a vegan egg replacement
- Maple Syrup: adds a little sweetness to the pumpkin
- Collagen Peptides: add an extra punch of protein
- Cinnamon: for that warm flavor
Recipe Tips:
- Customize your toppings with raisins, chocolate chips, white chocolate chips, nuts or a combo
- I like this silicone mini bar pan for baking these bars
- These bars can also be made in a muffin pan
- Collagen peptides are optional but with them in this recipe, each bar has over 9 grams of protein

Grain-Free Pumpkin Snacking Bars
Grain-Free Pumpkin Snacking Bars are a healthy, gluten-free, and dairy-free way to satisfy your sweet tooth.
Ingredients
Pumpkin Snacking Bars
- 3/4 cup pumpkin puree
- 1/4 cup maple syrup
- 2 eggs
- 1 tsp vanilla
- 1 1/2 cups almond flour
- 2 scoops collagen peptides (optional)
- 1 tsp baking sodea
- 1/2 tsp salt
- 1-2 tsp cinnamon
Optional Add-ins
- mini chocolate chips
- white chocolate chips
- chopped nuts
- raisins
Instructions
- Preheat oven to 350
- Combine pumpkin, eggs, vanilla, and maple syrup in a large mixing bowl
- Mix almond flour, salt, baking soda, and cinnamon in a separate bowl
- Combine dry ingredients into wet ingredients until the batter is smooth
- You can mix in mini chocolate chips, white chocolate chips, or raisins now, but I like to save some for the tops
- Fill greased bar or muffin cups 3/4 full with batter
- Top with your favorite add-ins. I did some with mini chocolate chips, some with mini white chocolate chips, and some with raisins
- Bake at 350 for 20-25 minutes till muffins are golden brown
- Let cool completely as they are very moist
