Blended Chocolate Chia Pudding
Ingredients
- 1/2 cup chia seeds
- 2 scoops vanilla or chocolate protein
- 2 tbsp cacao powder
- 2 cups plant-based milk (may need more depending on how thick or thin you like)
Optional Toppings:
- strawberries or other fruit
- granola
- cacao nibs
- shredded coconut
- coconut yogurt
- nuts or nut butter
Instructions
- In a blender add chia seeds, protein powder, cacao powder, and milk
- Stir together and let thicken in the fridge for at least one hour or overnight to let the chia seeds absorb the liquid
- Once chia pudding has thickened blend in the blender till smooth and creamy
- Layer with toppings of choice such as granola, strawberries, and cacao nibs
- Store chia pudding in airtight container or jar for up to 5 days
