I like to make this easy fudge recipe with peanut butter to turn it into healthy peanut butter cup fudge. This is an easy last-minute recipe for a holiday get-together or party!

- Chocolate chips: if you are looking to make this dairy-free look for chocolate labeled vegan or dairy-free
- Nut butter: I use peanut butter for peanut butter cup fudge but try almond or cashew butter for a richer chocolate flavor
- Monk fruit: a little sweetener for the fudge
- Coconut oil: just a little to keep the fudge smooth and creamy
Recipe Tips:
- My favorite chocolate chips to use are Lily’s Sweets, Good Sam, or Enjoy Life as they are lower in sugar. Good Sam and Enjoy Life are also dairy-free.
- I use Lankanto or Whole Earth for the monk fruit sweetener.
- I like to use peanut butter as my nut butter to turn it into a peanut butter cup-flavored fudge.
- Feel free to include any add-ins such as nuts or sprinkles to your fudge.
- Store in the fridge or freezer. Unlike most fudge, this treat stays solid at room temperature.

Ingredients
- 2 cups chocolate chips
- 1/2 cup nut butter
- 1-2 tbsp monk fruit
- 1 tsp coconut oil optional
- sea salt or sprinkles for topping optional
Instructions
- In a small saucepan, combine chocolate chips, nut butter, coconut oil, and monk fruit
- Cook on medium-low until fudge is melted and well-combined, stirring occansionally
- Line a small baking dish or bread pan with parchment paper
- Transfer the fudge mixture to a dish and spread it evenly
- Top with optional sea salt flakes or sprinkles
- Place in the freezer or fridge to firm up
- Slice and store in the fridge or freezer
