These are the ultimate raw vegan brownie. Perfect for summer when it is too hot to turn on the oven.  These brownies are super fudgy, rich, and filled with good-for-you superfoods. Look no further, this easy-to-make vegan dessert will satisfy the sweet tooth of even the pickiest eaters.

These healthy brownies are the ultimate treat. Best of all these thick fudgy frosted brownies require no oven and only a food processor to make.

Recently, I overheard someone say “these cookies are good I’m surprised they are gluten-free.” I glanced at the ingredients and quickly noticed they were processed, had tons of ingredients, and were not healthy. Gluten-free does not mean healthy.

When whipping up a treat my goal is always to make it with healthy real food ingredients that are naturally gluten-free, dairy-free, refined sugar-free, and so delicious that you would rather eat it than the traditional counterpart. Treats should nourish your body and soul.

No-Bake Vegan Fudge Brownies

Recipe Tips:

  • If your dates are too hard soak them in hot water for a few minutes then drain
  • Substitute cacao powder for coco powder if needed
  • I used Medjool dates in this recipe, but you could use another type, just may need to soak or use a few more depending on the size
  • For the frosting, you can use maple syrup, honey, or date syrup to sweeten
  • These brownies freeze beautifully and can be stored in the freezer for whenever you need a bite of chocolate
  • They can be stored in the fridge but will be softer. I like to store brownies in the freezer and take them out to soften them for a few minutes before eating.

Ingredients
  

Brownie Layer:

  • 9 medjool dates
  • 1 cup walnuts
  • 1/4 cup cacao powder
  • 1/2 tsp salt
  • 1/2 tsp vanilla extract

Frosting Layer:

  • 2 avocados
  • 1/4 cup maple syrup or honey
  • 1/4 cup cacao powder
  • 1/2 tps vanilla extract
  • 1/2 tsp salt

Optional add ins:

  • 2 scoops unflavored or chocolate collagen (or 1 scoop chocolate protein) to the frosting for extra protein
  • 1/4 cup peanut flour for peanut butter flavor to the frosting

Instructions
 

  • Remove pits from dates (if needed soak dates in hot water for a few minutes to soften)
  • Add walnuts, dates, cacao powder, vanilla, and salt to a food processor. Pulse to combine till soft and crumbly. The brownie dough will resemble potting soil. 
  • Line a 9x 5 bread pan with parchment paper and press the brownie mixture firmly into an even layer. If you don’t have a bread pan you can use any glass or plastic container available up to 8×8, depending on how thick you want your brownies to be.
  • Combine large avocado, cacao powder, honey or maple syrup, vanilla, and salt in the food processor until smooth and creamy.
  • Optional-add collagen, protein, or/and peanut flour to frosting and mix.
  • Swirl a thick layer of frosting on the brownie layer and r freezer for 1 hour until firm.
  • Slice into 10-14 brownies and store in the freezer
