Nothing reminds me of the beach like a piña colada, and while that may not traditionally be the best breakfast, I have taken the flavor of piña colada and made it into a tropical healthy breakfast that is blood-sugar balancing. It is sweet, fruity, and loaded with antioxidants to make you feel nourished and refreshed. This tropical smoothie is vegan, gluten-free, plant-based, and filled with healthy fats, fiber, and protein.

Recipe Tips:

  • I used canned coconut milk to make this smoothie creamy and have a good balance of healthy fats to keep blood sugar balanced. However, you can use coconut milk from a carton by increasing the amount to 1 cup and leaving out the water
  • I like to use 1/2 scoop vegan vanilla protein and 1 scoop collagen peptides. Feel free to use 2 scoops of collagen peptides or your favorite vanilla protein of choice
  • Enjoy as a smoothie or a smoothie bowl with toppings such as granola or coconut flakes

Ingredients
  

  • 1/2 cup light canned coconut milk
  • 1/2 cup water
  • 1-2 tbsp ground flaxseed (optional)
  • 1/2 scoop vanilla protien
  • 1 scoop collagen peptides (or omit and use 1 full serving of vanilla protien)
  • 1 cup frozen pineapple
  • 1/4 of a frozen banana
  • 3/4 cup frozen riced cauliflower

Toppings (optional)

  • Feel free to top with coconut shreds, granola, or your favorite toppings

Instructions
 

  • In a blender add all ingredients in the order listed then blend until smooth and creamy, adding water or ice as needed to get the desired consistency
  • Enjoy in a cup or as a smoothie bowl with or without toppings
