Trader Joe’s Taco Skillet

- Black beans: extra fiber, protein, and one of my favorites to add to any Mexican recipe
- Cheddar cheese: I used dairy-free but any variety of shredded cheese would work
Recipe Tips:
- Easily make this meal vegan by leaving out ground meat and only using black beans
- You can substitute black beans with your favorite type of beans
- Can add the skillet meal to a bed of rice, quinoa, cabbage, or greens
- Top with salsa, guacamole, or avocado

Trader Joe’s Taco Skillet
A new take on taco Tuesday with this healthy one-pan taco skillet meal using ingredients from Trader Joe’s.
Ingredients
- 1 lb ground beef or turkey
- 1 sweet onion
- 2 bags Trader Joe's spicy Mexican cauliflower rice
- 2 cans black beans (drained and rinsed)
- 1 cup shredded cheese (vegan if needed)
Instructions
- Dice onion
- Heat a large skillet to medium and spray with oil
- Add diced onion to the pan cook till soft
- Next, add in your ground beef or turkey and cook until the meat has browned
- Pour in both bags of spicy Mexican cauliflower rice and mix together
- Drain and rinse both cans of black beans
- Add black beans to the skillet and stir to combine
- Sprinkle on shredded cheddar and cover until cheese is melty
- Serve with avocado or guacamole and enjoy
- Can also be enjoyed on a bed or rice, quinoa, greens, or sautéed cabbage
