As if I need another reason to love Trader Joe’s cauliflower gnocchi, this recipe tastes like you spent all day cooking but is the easiest lasagna I have ever made. This lasagna is gluten-free, can easily be dairy-free, and is way easier than layering noodles, so you can whip up this healthy skillet meal even on a weeknight. I like to serve it with a side salad or sauteed zucchini. You will love this easy cheesy cauliflower gnocchi lasagna for a healthy comfort-food meal.

  • Ground beef or turkey: this recipe works well with either ground meat
  • Marinara sauce: use your favorite brand of sauce
  • Mozzarella cheese: regular or use dairy-free if needed
  • Sweet onion: sauteed sweet onion adds a lot of flavor
  • Garlic: can’t have lasagna without some garlic

  • You can cook gnocchi your preferred way of in the oven, air-fryer, or in a skillet to make them crispy
  • Make this dairy-free with vegan mozzarella like I did or use any mozzarella cheese you like  
  • You can make this recipe with either ground turkey or beef

Skillet Gnocchi Lasagna

Ingredients
  

  • 1 chopped sweet onion
  • 1 tbsp minced garlic
  • 2 bags Trader Joe's cauliflower gnocchi
  • 1 lb lean ground beef or turkey
  • 1 jar marinara sauce
  • 1 cup shredded mozzarella cheese (dairy-free if needed)

Instructions
 

  • Cook cauliflower gnocchi in the air-fryer, stove, or oven until crispy (use whichever method you prefer)
  • I typically roast or air-fry the cauliflower gnocchi (425 for 15-20 minutes then flip and cook another 15-20 minutes till golden in the oven or air fryer for about 15-20 minutes flipping halfway through)
  • Heat a skillet to medium
  • Add onions and garlic to skillet and cook until onions get soft
  • Next, add your ground turkey or beef to the skillet and cook until no longer pink
  • Pour in your marinara sauce and stir to combine
  • Cover and let simmer on medium-low for a few minutes
  • When gnocchi is done cooking add to skillet and mix to combine
  • Sprinkle cheese on top, cover, and let melt
  • Serve and enjoy!

    I’ve made this a couple of times and I love it! So easy and tasty! Does anyone know if it freezes well?

    • Whenever I make it it gets devoured so I have not tried freezing it. The only thing I would be concerned about is the texture of the gnocchi? However, it does store well in the fridge a few days.
