Insert the warm salad. This salad comes together beautifully with tons of flavor and can easily be customized to what you have on hand or even made vegan.  Warm kale autumn salad makes a healthy and satisfying veggie-packed lunch or dinner.

Warm Kale Autumn Salad is made with:

  • Kale: make it easy by buying a bag of pre-chopped kale
  • Onions: I use sweet onions
  • Sweet potato: can use sweet potato or butternut squash
  • Chicken sausage: use your favorite brand of chicken sausage or if you are vegan use a can of chickpeas
  • Apple: adds sweetness and crunch
  • Pepitas: adds crunch and healthy fast to this salad

Recipe Tips:

  • Bulk up this meal by layering it on top of quinoa, rice, or cauliflower rice
  • This warm salad also works great for meal prep since it can be stored in the fridge for up to 4 or 5 days
  • A great way to use up leftovers or make a single serving based on what is in your fridge
  • Feel free to switch up the veggies and protein with what you have on hand. Swap pumpkin seeds with another seed or nut. Are you vegan? Easily trade out the chicken sausage for chickpeas or tofu.
  • I made this recipe using ingredients I meal-prepped. However, you can easily sautee onion and sausage and then add in the other ingredients once cooked.

Ingredients
  

Salad

  • 1 diced and sauteed onion
  • 1 package sauteed chicken sausage (your favorite brand)
  • 3 cups roasted butternut squash or sweet potatoes
  • 2 small chopped apples
  • 12 cups chopped kale (I buy a bag of pre-chopped and washed kale)
  • 4 tbsp pumpkin seeds
  • salt and pepper to taste

Dressing

  • 2 tbsp mustard
  • 2 tbsp maple syrup
  • 4 tbsp apple cider vinegar

Instructions
 

  • Heat up a pan to medium heat
  • Dice apples
  • Mix the dressing in a small dish and set it to the side
  • Add a little oil to your pan to prevent sticking
  • Add kale, onions, butternut or sweet potatoes, chicken sausage, and apple to the pan
  • Mix and sautee and the kale is wilted
  • Pour dressing over kale salad and mix to coat
  • Remove from heat and sprinkle on pumpkin seeds and salt and pepper to your taste
  • Enjoy immediately or salad can store in the fridge for up to 4-5 days
