Winter fruit salsa salad is made with simple wholesome ingredients and makes for a colorful appetizer or side. This salad is easy to make, gluten-free, and can be vegan if you use dairy-free feta cheese. You will love this winter salsa that is filled with bright zesty colors and flavor.

Ingredients
  

  • 2 cup Persian or English cucumbers
  • 1 1/2 cups pomegranate seeds
  • 1 1/2 cup clementine oranges
  • 1/2 red onion
  • 2/3 cup crumbled feta cheese
  • 1/4 cup mint
  • 2 limes juiced
  • 1 tbsp olive oil
  • 1 tbsp honey
  • salt to taste

Instructions
 

  • Chop cucumbers into small pieces
  • De-seed pomegranates
  • Peel and chop clementine oranges
  • Dice red onion
  • Chop mint leaves
  • Add cucumbers, pomegranate, oranges, red onion, mint, and feta to a large bowl
  • In a small dish juice two limes then mix together with honey and olive oil
  • Toss salad with the dressing to combine
  • Add salt to taste 1/2-1 tsp and enjoy as a side or with chips for dipping
