Sweet and Spicy Salmon Roll Bowl

This quick and easy sweet and spicy salmon roll bowl comes together in under 30 minutes making it a perfect weeknight meal!

Ingredients
  

Salmon Roll Bowl

  • 1 lb salmon filet
  • 1 bag frozen cauliflower rice
  • 12 oz frozen or fresh edamame
  • mango salsa (homemade or store bought)
  • 1-2 avocados

Spicy Mayo

  • 3 tbsp mayo
  • 1 tbsp sriracha
  • 2 tsp coconut aminos

Instructions
 

  • Prep your salmon and cook your salmon. I made air-fried maple sriracha salmon, but you can prepare salmon any way you like or use leftover salmon
  • Make mango salsa or use a store-bought version. You can also peel and chop up mangos and forgo making the salsa
  • Saute frozen cauliflower rice on the stove on medium with salt and pepper until cooked
  • Steam or cook edamame as directed on the package
  • Add cauliflower rice, edamame, salmon, and mango salsa to a  bowl
  • Add 1/4-1/2 avocado to each bowl
  • Top with spicy mayo, coconut aminos, or sriracha to your taste
