I love a salad with non-traditional greens. Shredded brussels make for a great base for this fall or winter salad and they don’t get soggy like traditional lettuce. This colorful, bright, zesty brussel salad is perfect for a holiday, fall or winter get-together, or a weeknight meal. It easily comes together in under 20 minutes and is so flavorful. Brussel and pomegranate salad is gluten-free and can be dairy-free.

  • Walnuts: Adds the perfect crunch to this salad but if you don’t have walnuts pecans or another nut could work as well
  • Dressing: a vinegarette made with apple cider vinegar, dijon mustard, maple syrup, and olive oil

Recipe Tips:

  • Make this recipe really easy to throw together by buying shredded brussels, pomegranate seeds, and crumbled feta and you can make it in about 10 minutes
  • If you buy pre-shredded sprouts I always go through them and pick out any hard parts that are in the mix
  • To hand shred brussels you can chop by hand, use a large box grater, or use a food processor
  • When bringing the salad to a get together I like to store the salad and dressing in separate containers and mix the dressing right before serving
  • This salad doesn’t get soggy like traditional lettuce after dressed, but still tastes best when consumed within 3 days
  • Make this salad vegan and dairy-free by using vegan feta cheese

Ingredients
  

Salad

  • 10 oz shredded brussel sprouts (around. 3-4 cups)
  • 1/2 cup pomegranate seeds
  • 1/3 cup crumbled feta (dairy-free if needed)
  • 1/4 cup chopped walnuts

Dressing

  • 2 tbsp apple cider vinegar
  • 1 tbsp maple syrup
  • 1 tbsp olive oil
  • 1 tbsp dijon mustard
  • salt & pepper to taste

Instructions
 

  • Shred brussels or if you bought pre-shredded make sure there are no hard pieces
  • Add shredded brussels, pomegranate seeds, feta, and walnuts to a bowl
  • Whisk the dressing together in a small dish
  • When ready to serve pour dressing over the salad, mix to combine, and enjoy!
