There is something special about chocolate-dipped fruit, so I decided to try it with oatmeal. This vegan, orange, chocolate oatmeal is like a warm bowl of chocolate with a burst of orange. This breakfast may look indulgent but it is filled with superfoods, protein, and even hidden veggies.

Recipe Tips:

  • Don’t have coconut milk? You can easily make these oats with any milk or water you have on hand.
  • I always stock up on frozen riced cauliflower from Costco and Trader Joes.
  • I like to prepare my oatmeal ingredients in a pot the night before so they are ready to cook in the morning. Letting the oats soak in the liquid and chia seeds makes them extra thick, so you may need to add more liquid in the morning.

Dark Chocolate Orange Protein Oats

Ingredients
  

  • 1/4 cup oats
  • 3/4 cup riced cauliflower frozen
  • 1 tbsp chia seeds
  • 1 tbsp cacao powder
  • 1 scoop protein powder
  • 1/4 cup coconut milk canned
  • 1/2 cup water or as needed to thin oats
  • mandarin orange slices
  • cacao nibs or chocolate chips for topping
  • sea salt for topping

Instructions
 

  • Add all ingredients, except for cacao nibs and mandarin slices, to a small pot.
  • Cook on stove, stirring oats occasionally, until they reach your desired consistency.
  • Peel oranges (mandarins and sumo mandarins make this super easy).
  • Add oats to a bowl and top with cacao nibs (or chocolate chips) and a sprinkle of sea salt.
  • Enjoy!
