I love oatmeal, but in the summer I don’t crave warm oats, so that is where overnight oatmeal comes in. Overnight oatmeal is easily prepped the night before and you can even prep multiple days in advance and add toppings in the morning!

What I love about oatmeal is you can switch up the flavors, toppings, and textures every time you make it. I even like to sneak in veggies for extra nutrition and to fluff up my oats. I added frozen riced cauliflower to these overnight oats for extra fiber and veggie power.

Once peach season hits I forgot about all other fruit and devour peaches daily. I love peach crumble and knew the combination of vanilla, oats, cinnamon, and peaches would satisfy!

Ingredients
  

  • 1/3 cup oats
  • 1/3 cup plain yogurt (non-dairy if needed)
  • 1/3 cup plant based milk of choice
  • 1/3 cup frozen riced cauliflower
  • 1 tbsp chia seeds
  • 1 scoop vanilla protein
  • 1/2 tsp vanilla extract
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1 chopped peach
  • nut butter or chopped nuts for topping

Instructions
 

  • Mix together oats, yogurt, chia seeds, riced cauliflower, protein, vanilla, salt, and cinnamon in a small bowl and put in the fridge overnight
  • When you are ready to eat top oats with chopped peaches, nut butter, or chopped nuts
