Easy Chocolate Peppermint Fudge is made with:
- Chocolate chips: if you are looking to make this dairy-free look for chocolate labeled vegan or dairy-free
- Almond butter: I use almond butter to keep a rich chocolate flavor to this fudge
- Monk fruit: I used monk fruit to add a little extra sweetness but you can use your sweetener of choice
- Coconut oil: just a little to keep the fudge smooth and creamy
- Peppermint extract: adds the refreshing peppermint flavor to the fudge
- Candy Canes: crushed candy canes or peppermints on top of the fudge

Recipe Tips:
- My favorite chocolate chips are Lily’s Sweets, Good Sam, Hu Chocolate, or Enjoy Life as they are lower in sugar. Good Sam and Enjoy Life are also dairy-free.
- I use Lankanto or Whole Earth for the monk fruit sweetener.
- I have not tried another nut butter in place of almond butter, but cashew butter could work. I would avoid peanut butter as it would make it taste more like a peanut butter cup
- Store in the fridge or freezer to keep longer, however, unlike most fudge, this treat stays solid at room temperature.

Easy Chocolate Peppermint Fudge
Easy chocolate peppermint fudge is a bite of holiday heaven made with just five simple ingredients and is vegan, gluten-free, and a healthier holiday fudge.
Ingredients
- 2 cups chocolate chips
- 1/2 cup almond butter
- 1-2 tbsp monk fruit
- 1 tsp coconut oil
- 1 tsp peppermint extract
- crushed candy canes to top fudge
Instructions
- Add chocolate chips and coconut oil to a microwavable bowl or saucepan.
- Microwave on medium power stirring every 30 seconds until the chocolate is melted or cook chocolate in a saucepan on medium-low stirring chocolate until melted
- Once the chocolate is melted mix in nut butter, peppermint extract, and sweetener
- Line a bread pan with parchment paper and transfer the fudge mixture to the dish
- Top with crushed candy canes
- Place fudge in the fridge to firm up (or in the freezer to speed it up)
- Once fudge is firm slice and store in the fridge, freezer, or at room temperature
