This is also the meal that got me eating arugula, which goes to show you are never too old to learn to like a new veggie. Hawaiian chicken bowls are gluten-free, high-protein, and easily customizable.

- Hawaiian chicken bowl doesn’t save well once dressed but can be made ahead of time and you can store the ingredients separately before serving
- Make this vegan by using chickpeas instead of chicken

Hawaiian Chicken Bowl

Ingredients
- 1 bag arugula
- 1 cup brown rice
- 1 can black beans
- 2 cups roasted butternut squash or sweet potatoes
- 1 lb chicken breast or boneless chickent thighs
- 1 cup BBQ sauce
- 1 cup pineapple salsa or make my pineapple cucumber salsa
- 2 avocados
Instructions
- Cook rice as instructed on the package
- Chop and roast sweet potoates or butternut squash
- Grill, bake or make shredded BBQ chicken
- Drain and rinse one can of black beans
- Slice avocados
- Add greens, rice, black beans, roasted sweet potatoes or butternut, and bbq chicken to a bowl. Top with salsa, avocado, and more BBQ sauce on the chicken, and enjoy!
