This healthy lasagna soup is the perfect recipe for cold days because it is a bowl of comfort while still being nutritious. Lasagna soup is filled with tons of protein and makes for great leftovers. This lasagna can easily be gluten-free and dairy-free and is way easier than layering noodles, so you can whip up this healthy soup even on a weeknight.

  • Sweet onion: sweet or yellow onion will work best in this recipe
  • Garlic: fresh or minced garlic
  • Chicken sausage: I use Italian chicken sausage, but use your favorite

  • Bone broth: you can use chicken broth or add extra protein with bone broth
  • Gluten-free pasta: Any gluten-free pasta will work

Recipe Tips:

  • I like to use chickpea pasta because it is gluten-free and adds extra fiber and protein 
  • When cooking pasta I always cook for 1 minute less than the box directs to keep it from getting mushy
  • I use bone broth because it is good for gut health and adds extra protein
  • Make this dairy-free with vegan mozzarella like I did or use any mozzarella cheese you like  
  • Can also make lasagna soup with ground sausage, meat, or turkey

Ingredients
  

  • 1 chopped sweet onion
  • 3-5 cloves minced garlic
  • 1 pack chicken sasuage chopped into bite-size pieces
  • 2 cans fire-roasted tomatoes
  • 2 cups chicken broth or bone broth
  • 2 tbsp Italian seasoning
  • 1 box gluten-free pasta (I use chickpea pasta)
  • shredded mozzarella for topping (dairy-free if needed)

Instructions
 

  • Heat one tablespoon of olive oil in a large pan over medium heat
  • Add chopped onion and minced garlic and cook till soft and translucent
  • Add your chopped chicken sausage to the large pan and stir occasionally until browned
  • Meanwhile, prepare noodles according to the directions listed on the package
  • Once your sausage is cooked mix in two cans of diced tomatoes, broth, and spices
  • Cover and let the soup simmer
  • Once pasta is finished cooking drain and then stir into soup
  • Serve with mozzarella cheese on top
