Healthy Lasagna Soup is made with:

Healthy Lasagna Soup

Ingredients
- 1 chopped sweet onion
- 3-5 cloves minced garlic
- 1 pack chicken sasuage chopped into bite-size pieces
- 2 cans fire-roasted tomatoes
- 2 cups chicken broth or bone broth
- 2 tbsp Italian seasoning
- 1 box gluten-free pasta (I use chickpea pasta)
- shredded mozzarella for topping (dairy-free if needed)
Instructions
- Heat one tablespoon of olive oil in a large pan over medium heat
- Add chopped onion and minced garlic and cook till soft and translucent
- Add your chopped chicken sausage to the large pan and stir occasionally until browned
- Meanwhile, prepare noodles according to the directions listed on the package
- Once your sausage is cooked mix in two cans of diced tomatoes, broth, and spices
- Cover and let the soup simmer
- Once pasta is finished cooking drain and then stir into soup
- Serve with mozzarella cheese on top
