This quick, healthy meal is packed with protein and tons of fiber from the veggies. I got all the ingredients for this easy meal from Trader Joe’s, but you can pick up the ingredients anywhere.

Healthy One-Skillet 15-Minute Curry

Ingredients
- 1 sweet onion chopped
- 1 lb ground turkey or 2 cans chickpeas if vegan
- 1 16 oz bag frozen peas
- 1 jar healthy curry sauce
Instructions
- Dice onion
- Heat a large skillet to medium
- Saute onion until soft
- Add ground turkey and cook until no longer pink
- Add in the bag of frozen peas and curry sauce and mix to combine
- Simmer until warm and serve with rice, cauliflower rice, or quinoa
