Ingredients
Chia Pudding
- 1/2 cup chia seeds
- 2 scoops vanilla protein
- 2 cups plant-based milk
- 1 lemon (juice and zest)
- fresh or frozen blueberries
Optional Toppings
- shredded coconut
- nuts or nut butter
- fruit
- coconut yogurt
Instructions
- In a bowl add chia seeds, protein, milk, lemon juice, and lemon zest
- Whisk together and let thicken in the fridge for at least one hour
- Once chia seed pudding has thickened layer with fresh or frozen blueberries and any topping you enjoy
- Store chia pudding in an air-tight container for up to 5 days
