Healthy Vegan Mango Edamame Salad
Ingredients
- 3 mangos
- 2 cups shelled edamame
- 1 can drained and rinsed black beans
- 1 can drained corn
- 1 red onion
- 1/4 cup chopped cilantro
- 2 limes
- 1 tbsp apple cider vinegar
- 1 tbsp olive oil
- salt and pepper to taste
Instructions
- Peel and dice mangos
- Chop red onion and cilantro
- Drain and rinse corn and beans
- Cook shelled edamame as directed on package
- In a large bowl combine mangos, red onion, corn, black beans, edamame, and cilantro
- Add the juice of two limes, oil, apple cider vinegar, and salt and pepper
- Mix to combine
