Ingredients
  

  • pint cherry or grape tomatoes
  • 2 c shelled edamame a 12-16 oz of frozen edamame works well
  • 1 can sweet corn
  • 1/2 red onion
  • 1/4 cup cilantro
  • 2 limes
  • 2 tbsp olive oil
  • salt to taste

Instructions
 

  • Cook edamame as directed on the package (I buy a frozen bag of shelled edamame, skip if yours is not frozen)
  • Slice tomatoes in half
  • Dice onions and chop cilantro into small pieces
  • Drain can of sweet corn
  • In a large mixing bowl combine tomatoes, edamame,, corn, and onion
  • Add the juice of two limes, olive oil, salt and pepper
  • Toss to combine and enjoy immediately or store in the fridge for up to 4-5 days
