Recipe Tips:
- This recipe is for one serving but I always at least double it to prep enough parfaits for a couple of days
- Feel free to use any plain yogurt or even Greek yogurt if you are not dairy-free
- You can swap the vanilla protein in the yogurt layer for chocolate protein to increase the chocolate flavor or add up to 2 tablespoons of cacao powder
- To avoid clumps you can sift matcha with a bamboo whisk, use a frother, or if you don’t like the texture of chia seed pudding you can blend it in a blender after it thickens
- I like a thicker chia seed pudding, but if you like it thinner you can always add more liquid. Make sure to let the chia pudding thicken and set first, as it is always easy to make it thinner, but not thicker

Matcha Chocolate Chip Chia Pudding
Ingredients
Matcha Chia Pudding Layer:
- 2 tbsp chia seeds
- 1 tsp matcha powder
- 1/2 scoop vanilla protein
Chocolate yogurt Layer:
- 1/2 cup plain yogurt (greek or dairy-free)
- 1/2 scoop vanilla protein
- 1 tbsp cacao powder
Toppings:
- cacao nibs or mini chocolate chips
Instructions
- In a jar or container mix chia seeds, matcha, protein, and milk. Let thicken in the fridge for a few hours or overnight, and stir again before serving
- In a jar or container mix plain yogurt of choice (both dairy-free or greek yogurt works) with vanilla protein and cacao powder and store in the fridge
- Once chia seed pudding has thickened layer matcha chia seed pudding with the chocolate yogurt and then top with cacao nibs or mini chocolate chips
