A colorful and healthy one-pan meal that is flavorful, easy, and so delicious. This sheet pan meal is filled with tons of veggies and is great for a weeknight meal or healthy meal prep. This sheet pan meal can be made vegan, paleo, or Whole 30 friendly. Made with a rainbow of colors this recipe will use up any produce sitting in the fridge.

  • Chicken sausage: enjoy with your favorite chicken sausage
  • Sweet potatoes: chopped sweet potatoes or butternut squash for this recipe
  • Broccoli: Buy pre-chopped or chop it yourself
  • Sweet onion: I like to use red onion or sweet Vidalia onion for more flavor
  • Bell peppers: red, yellow, or orange bell peppers work best
  • Chickpeas: add extra protein and fiber

Healthy Veggie & Sausage Sheet Pan Meal

Recipe Tips:

  • This recipe can easily be made with the veggies you prefer and have on hand
  • Other veggies that are great in this dish include zucchini, squash asparagus, green beans, brussels sprouts, grape tomatoes, and carrots. 
  • If you are a vegan omit the chicken sausage and add another can of chickpeas
  • If you are following a paleo diet omit the chickpeas
  • To make this meal more filling and last longer by serving it on top of rice, quinoa, greens, or even in a wrap.

Ingredients
  

  • 1 chopped onion (I use a sweet onion or a red onion)
  • 1-2 chopped bell peppers
  • 3 cups chopped broccoli
  • 2-3 cups cubed sweet poatoes (can also subsitute for butternut squash)
  • 1 package of chicken sausage sliced into rounds
  • 1 can chickpeas (drained and rinsed)
  • 2 tbsp avocado oil
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • salt and pepper to taste

Instructions
 

  • Preheat oven to 425
  • Whisk together oil with spices and set aside
  • Line a sheet pan with parchment paper or a silicone liner
  • Chop veggies (or buy them pre-chopped) and add to a large mixing bowl
  • Slice sausages (if you eat animal protein) and add to the bowl
  • Drain and rinse the can of chickpeas and mix into the bowl of veggies and sausage
  • Drizzle oil and spice mixture on top then stir to cover 
  • Place veggie and sausage mixture on lined baking pans
  • Bake for 30-35 minutes
