As if I need another reason to love Trader Joe’s cauliflower gnocchi, this recipe tastes like you spent all day cooking but is the easiest lasagna I have ever made. This lasagna is gluten-free, can easily be dairy-free, and is way easier than layering noodles, so you can whip up this healthy skillet meal even on a weeknight. I like to serve it with a side salad or sauteed zucchini. You will love this easy cheesy cauliflower gnocchi lasagna for a healthy comfort-food meal.

Skillet Gnocchi Lasagna is made with:

Skillet Gnocchi Lasagna
Skillet gnocchi lasagna is an easy and healthy lasagna that is gluten-free, high-protein, and delicious comfort food.
Ingredients
- 1 chopped sweet onion
- 1 tbsp minced garlic
- 2 bags Trader Joe's cauliflower gnocchi
- 1 lb lean ground beef or turkey
- 1 jar marinara sauce
- 1 cup shredded mozzarella cheese (dairy-free if needed)
Instructions
- Cook cauliflower gnocchi in the air-fryer, stove, or oven until crispy (use whichever method you prefer)
- I typically roast or air-fry the cauliflower gnocchi (425 for 15-20 minutes then flip and cook another 15-20 minutes till golden in the oven or air fryer for about 15-20 minutes flipping halfway through)
- Heat a skillet to medium
- Add onions and garlic to skillet and cook until onions get soft
- Next, add your ground turkey or beef to the skillet and cook until no longer pink
- Pour in your marinara sauce and stir to combine
- Cover and let simmer on medium-low for a few minutes
- When gnocchi is done cooking add to skillet and mix to combine
- Sprinkle cheese on top, cover, and let melt
- Serve and enjoy!

I’ve made this a couple of times and I love it! So easy and tasty! Does anyone know if it freezes well?
Whenever I make it it gets devoured so I have not tried freezing it. The only thing I would be concerned about is the texture of the gnocchi? However, it does store well in the fridge a few days.
