One-pan meals are my go-to when I don’t know what to make for dinner, and this southwest sheet pan meal is my all-time favorite. It is colorful, delicious, easy to make, and so versatile. I can meal prep this and eat it a different way all week. Southwest sheet pan meal is wonderfully spiced and made with colorful veggies. It can be a taco filling, nourishing bowl, salad topper, or even add an egg or top for breakfast. Southwest sheet pan meal is gluten-free, dairy-free, and your new favorite weekday meal.

  • Onion: I used red onion but a sweet onion could work as well
  • Bell peppers: I like yellow, orange, or red bell peppers for this recipe
  • Sweet Potato: filled with fiber, natural sweetness, and an excellent source of vitamins
  • Sweet corn: adds sweetness and crunch to the recipe
  • Black beans: drained and rinsed black beans add protein and fiber
  • Chicken sausage:  a good source of protein, use your favorite brand
  • Spices: For spices, we’ll be using chili powder, cumin, salt, and garlic powder

Ingredients
  

  • 1/2 diced red onion
  • 2 diced sweet potatoes
  • 2 diced bell peppers yellow, orange, or red
  • 1 can of black beans drained and rinsed
  • 1 can sweet corn drained
  • 1 pack chicken sausage
  • 1 1/2 tsp chili powder
  • 1 1/2 tsp cumin
  • 1 1/2 tsp garlic powder
  • 1/2 tsp salt

Instructions
 

  • Dice onion, sweet potatoes, and bell peppers
  • Add diced veggies to a baking sheet and spray lightly with oil
  • Mix chili powder, cumin, garlic powder, and salt together
  • Sprinkle half of the spice mixture on the veggies and mix
  • Bake veggies for 20 minutes at 400 degrees
  • Drain and rinse beans, drain corn, and chip chicken sausage into rounds
  • Remove the pan from the oven and add corn, black beans, chicken sausage, and remaining spices
  • Mix together and return to the oven to bake for 20 more minutes
