This spicy ginger cucumber, pepper, and chickpea salad is perfect for a snack, light lunch, healthy side dish, or a salad topper. This salad is healthy and easy to make with just six simple ingredients that are gluten-free, dairy-free, vegan, and plant-based.

Spicy Ginger Cucumber, Pepper, and Chickpea Salad is made with:
- Persian or English cucumbers: Persian and English cucumbers are crunchier and less watery than traditional cucumbers
- Bell peppers: use red or orange bell peppers or mini sweet peppers
- Chickpeas: one can of drained and rinsed chickpeas for plant-based protein and extra fiber
- Ginger dressing: use your favorite ginger dressing I used this one
- Chili Crunch: a favorite way to spice up any meal. Use as little or as much as you want to add some heat to this recipe. I used this chili crunch but you can use any brand.
- Everything but the bagel seasoning: Adds a savory crunch to the recipe, you can buy it at most stores including Trader Joe’s
Recipe Tips:
- I like Persian or English cucumbers in this recipe but any cucumber will work
- You don’t have to peel Persian or English cucumbers as they both have thinner skin, however, I prefer my cucumbers peeled, but either way works
- You can use bell peppers (red and orange, or yellow but not green) or mini-sweet peppers
- Feel free to make your own homemade ginger dressing or buy your favorite store-bought
- Store in the fridge in an air-tight container for up to 5 days
- I love to enjoy this salad with a side of rice and a protein of choice such as chicken or salmon

Ingredients
- 6 Persian cucumbers or 1 English cucumber
- 2 Bell peppers (red or orange) or about 16-20 mini sweet peppers
- 1 can Chickpeas drained and rinsed
- 1/3 cup Ginger dressing
- 2 tbsp Chili Oil Crunch (or to taste)
- 2 tbsp Everything but the bagel seasoning (or to taste)
Instructions
- Slice cumbers into bite-size pieces (peeling cucumbers is optional to your personal preference)
- Chop peppers into bite-size pieces
- Drain and rinse and can of chickpeas
- Add veggies and chickpeas to a bowl and top with ginger dressing, chili oil crunch, and everything but the bagel seasoning
- Mix well and serve as is or enjoy as a side, on top of a salad or with your favorite meal
