Spicy Pumpkin and Turkey Curry
Spicy pumpkin and turkey curry is an easy, creamy, veggie-packed one-pot meal.
Ingredients
- 1 onion diced
- 1 1/2 lbs ground turkey
- 1 bag frozen peas
- 1 1/2 cup pumpkin puree
- 1 can fire roasted tomatoes
- 1 cup coconut milk
- 3 tsp curry powder
- 1/2 tsp chili powder
- 1/2 tsp turmeric powder
- 1/2 tsp ground ginger (or use fresh if you have it on hand)
- 1/2 tsp cumin
- 1/2-1 tsp cayenne pepper (start with less and add to taste preference)
- salt and pepper to taste
Instructions
- Dice onion
- Heat a large skillet to medium heat
- Spray with oil and saute onion for a few minutes
- Add ground turkey to skillet and cook until no longer pink
- Stir in pumpkin, can of tomatoes, coconut milk and spices
- Add the bag of frozen peas and mix to combine
- Cover and let simmer for 20-30 minutes
- Serve with rice, quionoa, or cauliflower rice and enjoy
