Ingredients
  

  • 1 onion diced
  • 1 1/2 lbs ground turkey
  • 1 bag frozen peas
  • 1 1/2 cup pumpkin puree
  • 1 can fire roasted tomatoes
  • 1 cup coconut milk
  • 3 tsp curry powder
  • 1/2 tsp chili powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp ground ginger (or use fresh if you have it on hand)
  • 1/2 tsp cumin
  • 1/2-1 tsp cayenne pepper (start with less and add to taste preference)
  • salt and pepper to taste

Instructions
 

  • Dice onion
  • Heat a large skillet to medium heat
  • Spray with oil and saute onion for a few minutes
  • Add ground turkey to skillet and cook until no longer pink
  • Stir in pumpkin, can of tomatoes, coconut milk and spices
  • Add the bag of frozen peas and mix to combine
  • Cover and let simmer for 20-30 minutes
  • Serve with rice, quionoa, or cauliflower rice and enjoy
