Turkey and pumpkin chili is healthy, made with flavorful spices, and can easily be made on the stove, instant pot, or in the crock pot.

  • Onion: sweet or yellow onion will work best in this recipe
  • Ground turkey: I used 93/7 turkey for this recipe but ground beef will also work
  • Bell peppers: I like yellow, orange, or red bell peppers for this recipe
  • Beans: use a combination of black beans and kidney beans or your favorite beans
  • Jalapeno: optional but adds spice
  • Diced tomatoes: diced tomatoes add flavor and extra veggies
  • Pumpkin puree: Pumpkin tastes amazing and adds thickness to the chili while boosting the nutrients
  • Spices: For spices, we’ll be using chili powder, cumin, paprika, and salt. You can also add cayenne if you’d like a little bit of heat

Recipe Tips:

  • This chili can easily be made with ground turkey, beef, bison, or make a meatless chili with extra beans
  • Easily adjust the spice to make it more or less spicey to your preference
  • Top chili with your favorites such as cheese, chips, crackers, avocado, guacamole, or serve with a slice of toast
  • Turkey and pumpkin chili can easily be meal prepped or saved in the fridge for up to 5 days.
  • To make chili in the instant pot use the saute feature to saute onions, peppers, and meat. Add in the rest of the ingredients and mix to combine. Close the instant pot and cook on high for 12 minutes. Quick release or natural release and enjoy!
  • To make in the crock pot saute onion, peppers, and meat. Add to crock pot with the rest of the ingredients and cook on low for 6-8 hours or on high for 4 hours.

Ingredients
  

  • 1 onion diced
  • 2 bell peppers diced(red, yellow, or orange)
  • 1 jalapeno finely diced (optional, but suggested)
  • 1 lb ground turkey
  • 3 tbsp chili powder
  • 1 tbsp cumin
  • 1 tbsp paprika
  • 1/2 tsp salt
  • pinch cayenne pepper (optional for heat)
  • 2 cans diced tomatoes
  • 1 can of pumpkin puree
  • 1 can of black beans
  • 1 can of kidney beans

Instructions
 

  • Heat a large skillet or pot to medium heat
  • Add a little oil and saute onion for 5 minutes
  • Add chopped peppers and saute for another 5 minutes
  • Add the ground turkey and break up the meat and cook until no longer pink
  • Mix in the spices
  • Drain and rinse beans
  • Add beans, pumpkin, and diced tomatoes to the skillet and stir to combine
  • Cover, reduce heat, and let simmer for 10-15 minutes
  • Serve as is or with desired toppings
