Vegan Flourless Peanut Butter Blondies
Ingredients
- 1 cup peanut butter the natural kind made with only peanuts and salt
- 5 tbsp honey
- 2 scoops collagen peptides
- 1/4 cup peanut flour
- 2 tbsp flaxseed
- 6 tbsp water
- 1/2 tsp baking soda
- chocolate chips I like the enjoy life brand or Trader Joe’s Completely Cacao chips
Instructions
- Make 2 flax eggs by mixing 2 tbsp of ground flaxseed with 6 tbsp of water in a bowl, then let sit in the fridge for about 15 minutes to thicken up.
- Preheat the oven to 350° and line a 9 x 5 in baking pan with parchment paper.
- Measure out 1 cup peanut butter and microwave for about 45 seconds to soften.
- Stir in honey, peanut flour, collagen peptides, baking soda, and flax eggs.
- Pour into baking pan and dot the top with chocolate chips.
- Bake for 20-25 minutes or until golden brown.
- Let cool, slice, and DON’T give all the vegan blondies away!
