Ingredients
Salad:
- 2 bunches of chopped lacinato kale
- 1/4 head chopped purple cabbage
- 1 cup shredded carrots
- 3/4 cup pomegranate seeds
- 2 peeled oranges or clementines
- 1/3 cup chopped walnuts
Orange Vinaigrette Dressing:
- 1/4 cup of juice squeezed from an orange
- 1 tbsp olive oil
- 1 tbsp maple syrup
- 2 tsp djion mustard
Instructions
- Chop kale and cabbage.
- Whisk together the orange vinaigrette dressing
- In a large bowl add kale and dressing then massage the kale with hands for a minute
- Add the cabbage, carrots, pomegranate seeds, walnuts, peeled oranges and walnuts
- Toss to combine and enjoy
