Healthy Broccoli and Chickpea Apple Salad
Healthy broccoli and chickpea apple salad is a flavorful and crunchy salad or side dish that is easy to make and great for cookouts, weekday meal prep, or get-togethers.
Every time I go to a cookout the veggies and pasta are drenched in mayo, sugar, or other questionable ingredients. I wanted to create a light and healthy side dish that was packed with flavor and nutrients. This crunchy and light broccoli salad is dressed with a honey dijon vinegarette that does not overpower the salad.

Broccoli and Chickpea Apple Salad is made with:
- Broccoli: fresh broccoli and chop it small
- Chickpeas: add plant-based protein to make the salad more filling
- Apples: adds sweetness and crunch
- Green onions: a mild onion that works well in salads
- Carrots: I buy pre-shredded carrots to make this easy
- Apple cider vinegar: makes the vinegarette and it is great for gut health and digestion
- Dijon mustard: for the honey mustard dressing
- Honey: or maple syrup both work well in the dijon vinegarette
- Olive oil: a heart-healthy fat for the dressing
Recipe Tips:
- You can squeeze lemon juice on the sliced apples to help prevent browning
- Chop your broccoli and fine to allow the dressing to marinate the salad and make it easier to eat
- Make it vegan by swapping honey for maple syrup which works just as well in this salad
- Make it ahead of time, this salad keeps well in the fridge

Broccoli and Chickpea Apple Salad
Healthy broccoli and chickpea apple salad is a flavorful, light, and crunchy salad, that is packed with plant-based protein and topped with a honey dijon vinegarette that is great for weekly meal prep or summer BBQs
Ingredients
Salad
- 1 head of broccoli
- 1 apple
- 1 cup shredded carrots
- 1/4 cup green onions
- 1 can drained and rinsed chickpeas
- 1/3 cup tart dried cherries
Dressing
- 3 tbsp apple cider vinegar
- 1 tbsp olive oil
- 1 tbsp djion mustard
- 1 tbsp honey
- salt and pepper to taste
Instructions
- Chop broccoli, apples, green onions, and dried cherries
- Add chopped fruits and veggies to a large bowl
- Drain and rinse a can of chickpeas and add to the bowl
- Whisk together apple cider vinegar, olive oil, dijion mustard, honey, salt and pepper to make the dressing
- Pour dresssing over the salad and toss to combine
- Serve immediatley or store in the fridge for up to 5 days
