Peanut Butter Cup Banana Bites

Frozen peanut butter cup banana bites could not be simpler to make and they make a perfect healthy bite-size treat. 


Recipes don’t get much simpler than this, but I had to share because it is one I make on repeat. Frozen peanut butter cup banana bites are the perfect treat to satisfy your sweet tooth and by using green bananas they are also gut-friendly!

I use green bananas in this recipe because while bananas are still slightly green they are lower in sugar, higher in resistant starch that supports a healthy gut, and do not have a strong banana flavor that will overpower the peanut butter cup flavor.

These healthy frozen Reese’s cup banana bites are great for kids and the summertime. They make a great dessert or snack, are gluten-free, and can easily be made dairy-free.

Peanut Butter Cup Banana Bites are made with:

  • green banana: use bananas that are still somewhat green to keep the banana flavor from being too overpowering
  • peanut butter: to make these like Reese’s peanut butter cups, but you can substitute any nut butter of choice
  • chocolate chips: melt in the microwave – if you are looking to make this dairy-free look for chocolate labeled vegan or dairy-free 
  • coconut oil: just a little to make the melted chocolate smooth and creamy 
  • sea salt: to bring out all the flavor and chocolate with sea salt is always a winning combo

Recipe Tips:

  • This recipe is so delicious you are going to want to double or triple it, which you can easily do to make as many as you would like
  • To keep this recipe dairy-free and vegan use my favorite chocolate chips Good Sam or Enjoy Life
  • Make this recipe nut-free by using sunflower seed butter in place of the peanut butter
  • I love dark chocolate chips in this recipe but milk chocolate works just as well
  • Don’t have chocolate chips? You can use any chocolate bar as well just break it apart and melt it with coconut oil in the microwave.

Peanut Butter Cup Banana Bites

Ingredients
  

  • 1 slightly green banana
  • 2 tbsp peanut butter
  • 1/4 cup chocolate chips
  • 1/2 tsp sea salt

Instructions
 

  • Line a tray or large dish with parchment paper
  • Peel banana and slice into rounds about 1/4 inch thick
  • Top banana rounds with a layer of peanut butter
  • Melt chocolate chips and coconut oil in a small dish for 30-second intervals until melted
  • Use a spoon to add a dollop of melted chocolate on top of the peanut butter
  • Sprinkle sea salt on top of the melted chocolate
  • Place freezer to harden for an hour or until frozen
  • Store in the freezer for up to two months in an air-tight container
