Peach and tomato salsa is made with:

  • Peaches: fresh ripe peaches are the star of this recipe
  • Tomatoes: I use grape or cherry tomatoes, but any diced tomato will work
  • Red onion: adds zing and is best for salsa
  • Jalapeños: add as much or little as you like to make it spicy
  • Cilantro: fresh cilantro to add fresh herbs and flavor to this recipe
  • Lime juice: you will need a couple of limes
  • Salt: sprinkle on to your taste

How To Make/TipsNotes:

  • I use fresh ingredients for this recipes and don’t recommend canned
  • Ripe peaches or best for this salsa, but make sure they are not too soft or they get mushy when dicing
  • It is not necessary to peel peaches if you don’t want to-personal preference
  • The lime juice helps to keep the peaches from turning brown so cut peaches last and make sure to toss with lime juice to combine
  • I like my salsa with some spice and heat, but you can taste test to determine how many jalapeños to add
  • Before you cut the lime in half, roll them on the counter to soften them and make them easier to juice

Ingredients
  

  • 2 ripe peaches
  • 1/2 pint cherry or grape tomatos
  • 1/4 red onion
  • 1-2 jalapeños
  • 2 tbsp chopped fresh cilantro
  • 2 limes juiced
  • 1/2 tsp sea salt

Instructions
 

  • Slice cherry or grape tomatos
  • Finely chop red onion, jalapeños, and cilantro
  • Peel and dice fresh peaches
  • Add chopped ingredients to a medium bowl
  • Squeeze the juice of two limes over the salsa ingredients
  • Add salt and toss together to combine
  • Serve immediately or cover and refrigerate for up to 3 days

Notes

When picking peaches, make sure they are ripe, but not too soft. Otherwise, chopping peaches may be difficult because they can get really mushy.
