Zucchini Tomato Bake

This is one of my favorite side dishes to make because it looks fancy but is made with just a few simple ingredients and makes enough for a crowd or plenty for leftovers which are just as yummy. This dish takes less than 20 minutes to prep and is a delicious medley of summer veggies you will want to make again and again.

Zucchini Tomato Bake is made with:

  • Zucchini: Zucchini or any type of summer squash will work for this recipe
  • Tomatoes: sweet and juicy for the summer, I used heirloom tomatoes that were yellow and red
  • Sweet onion: Adds sweetness to this recipe you don’t want to miss
  • Feta cheese: Use feta cheese or vegan feta cheese if you are vegan or dairy-free

Recipe Tips:

  • This dish works great with zucchini or any summer squash
  • Easily make vegan by using a vegan feta cheese
  • Don’t like feta? Swap feta for mozzarella, goat cheese, or parmesan
  • Try to slice the zucchini around the same thickness so that the dish cooks evenly
  • Alternate between slices of tomato and zucchini when adding to the dish
  • I slice zucchinis and tomatoes in rounds, however, the tomatoes were quite large so I cut them into smaller slices

Ingredients
  

  • 1 large sweet onion
  • 2 zucchinis or summer squash
  • 2 large tomatoes
  • 4 oz feta cheese (vegan if dairy-free)
  • salt & pepper

Instructions
 

  • Preheat oven to 425 degrees
  • Dice onion and saute in a skillet with avocado oil on medium until onions are soft and transparent
  • Spray casserole dish with avocado oil and spread onions evenly on the bottom of the dish
  • Slice zucchini and tomatoes into circles (the tomatoes I often cut in half circles because the circles were quite large)
  • Arrange sliced veggies vertically until the casserole dish is full alternating between slices of zucchini and slices of tomatoes
  • Sprinkle with salt and pepper
  • Bake for 30 minutes (until the veggies are softened)
  • Remove from oven and sprinkle on feta cheese
  • Return to the oven and make for about 10 more minutes until the veggies are soft and the cheese has melted
  • Serve and store leftovers in the fridge for up to 5 days
