Recipe Tips:
- This recipe is customizable to the toppings you like or have on hand
- I use a low-sugar bbq sauce but you could also just make sure to spice your chicken well and leave off the BBQ sauce
- Don’t have time to make pickled cabbage? Use cucumbers, arugula, baby spinach, chopped cabbage, or another green in its place
- You can easily meal prep for the week by making the ingredients and storing them separately so they can be put together for a quick meal
- Make this vegan by making BBQ chickpeas instead of chicken

BBQ chicken and mango salsa bowls are a delicious combination of sweet, spicy, and tangy in a healthy high-protein meal.
Ingredients
Chicken
- 1-2 lbs boneless skinless chicken thighs
- 1/2 tsp salt
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp paprika
- 1/2 tsp chili powder
- 1/2 tbsp coconut sugar or brown sugar
- 1/3 cup BBQ sauce
Pickled Cabbage
- 1/2 small red cabbage chopped
- 1 cup apple cider vinegar
- 1 cup water
- 1 tsp salt
- 1 tbsp sugar or monk fruit
Bowls
- 1 cup rice
- 1 can black beans (drained and rinsed)
- 1 cup mango salsa (store bought or make my sweet and spicy mango salsa)
- 2 avocados
Instructions
Quick Pickled Cabbage
- Slice cabbage in half and remove the core
- Chop cabbage into small shredded pieces
- Add cabbage to a large glass bowl with apple cider vinegar, water, salt, and sweetener
- Leave bowl on the counter for 4-6 hours stirring occansionally
- Store in the fridge
BBQ chicken
- Mix salt, garlic powder, onion powder, paprika, chili powder, and sugar together then rub on chicken
- Grill, bake, or air fry your chicken until cooked
- Toss with BBQ sauce
BBQ Chicken and Mango Salsa Bowls
- Cook rice or cauliflower rice
- Make or buy mango salsa
- Drain and rinse a can of black beans
- Slice avocado
- In a bowl add pickled cabbage, rice, black beans, mango salsa, bbq chicken, and avocado and enjoy!
