This cheesecake smoothie is a great way to start your day or as a snack. It is packed with protein and healthy fats from the cottage cheese, cashew butter, and vanilla protein. The blueberries add a touch of sweetness and antioxidants. This smoothie is also a great way to get a daily dose of antioxidants, fruits, and veggies.
You will love Blueberry Cheesecake Smoothie because:
- Blueberry cheesecake smoothie is creamy and satisfying
- An easy way to add more fruits and veggies to your day
- Sweet, tangy, and full of vitamins and antioxidants
- High-protein, gluten-free, and plant-based smoothie
- A blood-sugar-balancing breakfast or snack
- Taste like dessert in a glass
Blueberry Cheesecake Smoothie is made with:
- Frozen blueberries: low in sugar fruit that is high in antioxidants
- Cottage cheese: gives the smoothie the signature cheesecake flavor
- Frozen zucchini or cauliflower rice: adds hidden veggies, nutrients, and makes the smoothie extra thick and creamy
- Protein Powder: a vanilla protein powder adds sweetness and protein
- Cashew butter: adds healthy fats for satiety and gives the smoothie a richer flavor
- Milk: milk of your choice I typically use cashew or coconut
Recipe Tips:
- Use frozen fruit and veggies to keep this smoothie thick and creamy
- I have tried it with a lactose-free cottage cheese and that works too if you are sensitive to dairy
- Option to top the smoothie with cacao nibs, granola, or cereal for crunch
- I used coconut yogurt to create the “clouds” on the glass
- You can leave out the frozen veggies if you don’t like them or don’t have them on hand, but you will need to reduce the amount of liquid
- If you need a sweeter smoothie and a 1-2 teaspoons of maple syrup or honey
- For a more tart smoothie and a squeeze of lemon juice
