The creamy lemon smoothie reminds me of lemon ice cream, but it is made with hidden veggies and green bananas that keep it creamy without the banana flavor. This smoothie can be made in less than five minutes and makes for a refreshing spring or summer smoothie. Lemon cream smoothie is plant-based, vegan, gluten-free, and makes the perfect summer sip. I love to swirl coconut yogurt on the cup and layer it with granola for a little crunch.

  • I used light canned coconut milk to make this smoothie rich and creamy tasting, but you can also substitute creamy cashew, macadamia, or almond milk in place of the coconut milk

Ingredients
  

  • 1 cup light canned coconut milk
  • 1 scoop vanilla protein
  • 1 small frozen slightly green banana
  • 3/4 cup frozen riced cauliflower
  • 1 large lemon for juice and zest (3-4 tbps)
  • 1 tsp vanilla extract
  • 1/2 tsp turmeric (optional for yellow color)
  • water and ice as needed

Instructions
 

  • Peel, slice, and freeze bananas that are still somewhat green to keep them from having an overpowering banana flavor
  • Add coconut milk, vanilla protein, vanilla extract, juice and zest from a lemon, frozen green banana, frozen riced cauliflower, and water and ice as needed to a blender
  • Blend until smooth and creamy adding ice or more liquid if needed
