Blended Blueberry Chia Pudding
The easiest creamiest way to start your day is with this blueberry whipped chia pudding that tastes like a blueberry muffin and is high in protein, vegan, and gluten-free.
Ingredients
Blueberry Chia Seed Pudding
- 1 1/2 cups milk of choice may need more or less depending on how thick or thin you like
- 6 tbsp chia seeds
- 2 scoops vanilla protein
- 1 cup frozen blueberries
- 1/2 tsp cinnamon (optional)
- 1/2 tsp vanilla extract (optional)
- 1/4 tsp salt (optional)
Optional Toppings
- fresh or frozen blueberries
- granola
- nuts or nut butter
- yogurt
Instructions
- In a blender add milk, chia seeds, protein powder, frozen blueberries, cinnamon, salt, and vanilla extract
- Stir together with a spoon and let thicken in the fridge for at least 30 minutes or overnight. (I like to stir once more about 5 minutes after stirring to really mix well)
- Once chia pudding has thickened blend in the blender till smooth and creamy adding extra milk only if needed
- Layer with toppings of choice such as granola, fresh or frozen, blueberries, yogurt, or nuts and enjoy
