Cabbage roll soup is a one-pot, high-protein, and veggie-filled meal that is easy to make for winter weeknight meals. This soup is gluten-free, dairy-free, and makes for great leftovers or meal prep.

Cabbage Roll Soup is made with:

Ingredients
- onion
- 4-5 cloves garlic (or 1 tbsp minced garlic)
- 1 red bell pepper
- 6 cups chopped green cabbage
- 1 1/2 lbs ground beef or bison
- 2 can diced fire-roasted tomatoes
- 1 can tomato sauce
- 4 cup beef broth or beef bone broth
- 3/4 cup white rice
- 2-3 tbsp coconut sugar (or brown sugar)
- 1 tbsp basil
- 1 tbsp oregano
- 1-2 tsp paprika (to your taste)
- salt and pepper to taste
Instructions
- Chop onion, garlic, pepper, and green cabbage
- Heat a large pot to medium
- Add oil to pot and saute onion, pepper, and garlic until soft
- Add ground beef and cook until browned
- Stir in green cabbage and let soften for a few minutes (2-3)
- A tomatoes, broth, spices, and rice to the pot and stir to combine
- Cover and let simmer for 25-30 minutes until rice is fully cooked
