Cabbage roll soup is a one-pot, high-protein, and veggie-filled meal that is easy to make for winter weeknight meals. This soup is gluten-free, dairy-free, and makes for great leftovers or meal prep.

  • Garlic: fresh or minced garlic
  • Bell pepper: one red, orange, or yellow bell pepper
  • Ground meat: ground beef or bison
  • Cabbage: adds bulk and veggies to the soup
  • Rice: use a white rice that takes 25-30 minutes to cook
  • Diced tomatoes: used diced fire-roasted tomatoes
  • Broth: to thin the soup use beef broth or for extra protein use beef bone broth
  • Spices: we use oregano, basil, paprika, coconut sugar, salt, and pepper in this recipe

Ingredients
  

  • onion
  • 4-5 cloves garlic (or 1 tbsp minced garlic)
  • 1 red bell pepper
  • 6 cups chopped green cabbage
  • 1 1/2 lbs ground beef or bison
  • 2 can diced fire-roasted tomatoes
  • 1 can tomato sauce
  • 4 cup beef broth or beef bone broth
  • 3/4 cup white rice
  • 2-3 tbsp coconut sugar (or brown sugar)
  • 1 tbsp basil
  • 1 tbsp oregano
  • 1-2 tsp paprika (to your taste)
  • salt and pepper to taste

Instructions
 

  • Chop onion, garlic, pepper, and green cabbage
  • Heat a large pot to medium
  • Add oil to pot and saute onion, pepper, and garlic until soft
  • Add ground beef and cook until browned
  • Stir in green cabbage and let soften for a few minutes (2-3)
  • A tomatoes, broth, spices, and rice to the pot and stir to combine
  • Cover and let simmer for 25-30 minutes until rice is fully cooked
  • Enjoy!
