Salted caramel cookie dough protein bites are healthy, gluten-free, and dairy-free cookie dough that is packed with protein and fiber.

Ingredients
  

  • 1 can drained and rinsed white beans (cannellii or great northeren)
  • 1/2 cup sunflower seed butter
  • 1/2 cup coconut flour
  • 1/2 cup caramel protein powder
  • 1/4 cup maple sryup
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 1/3 cup chocolate chips
  • 1 tsp coconut oil
  • flakey sea salt for sprinkles

Instructions
 

  • Drain and rinse cannellini beans
  • Add white beans, sunflower seed butter, coconut flour, caramel protein, maple syrup, vanilla, and salt to a food processor
  • Mix in a food processor till it forms a dough
  • Scoop with a cookie dough scoop to form balls and place on a tray and let set in the freezer for about 5 minutes to firm up
  • Melt chocolate chips in a small dish and mix with coconut oil
  • Dip cookie one side of the dough balls into the melted chocolate
  • Sprinkle chocolate with sea salt flakes
  • Put the cookie dough bites back in the freezer to let the chocolate harden
  • Store cookie dough protein bites in the freezer or the fridge in an air-tight container
