I like the texture and creaminess of white beans for these bites, but feel free to use chickpeas if that is what you have on hand. Now, hear me out. I’m a dessert lover, but I’m obsessed with making treats healthier. A lot of people are skeptical of adding beans to dessert, but these bites taste like dough taste even with a whole can of beans hidden inside.

You can whip up these healthy, gluten-free, and dairy-free cookie dough bites in about 10 minutes and enjoy the dough as a dip, spread, topping, or even scoop them into pop-able bites.  The protein and fiber in this cookie dough will help to stabilize blood sugar and give you lasting energy.

Chocolate Chip Collagen Cookie Dough Bites

Chocolate chip collagen cookie dough bites are healthy, gluten-free, and dairy-free cookie dough bites that are packed with protein and fiber.

Ingredients
  

  • 1 can white beans drained and rinsed*
  • 1/2 cup cashew butter
  • 1/2 cup coconut flour
  • 1/4 cup vanilla protein
  • 1/4 cup collagen peptides**
  • 4 tbsp honey or substitute with maple or date syrup
  • 1 tsp vanilla
  • 1/2 tsp salt
  • mini chocolate chips as many as you want

Instructions
 

  • Drain and rinse white beans.
  • Add white beans, cashew butter, coconut flour, protein, collagen peptides, honey, vanilla, and salt to a food processor.
  • Mix in food processor 'til it forms a dough.
  • Add dough to a bowl and mix in mini chocolate chips.
  • Let cool in the fridge for about an hour.
  • Use a cookie dough scoop to form balls.
  • Store in the fridge or freezer.
