- Shred chicken easily by using a hand mixer or stand mixer

- When I crave chicken salad and have no chicken cooked I throw it in the instant pot to cook then shred it with a hand mixer
- Dice the celery, onions, pecans, and jalapenos into small pieces to get crunch in every bite
- To have mild spice in the chicken salad make sure to de-seed the jalapenos
- I sometimes swill chop the cranberries to make sure they are evenly distributed throughout the recipe

Ingredients
- 3 cups shredded chicken
- 2/3 cup chopped celery
- 1/2 cup chopped green onions
- 2/3 cup dried cranberries
- 2/3 cup chopped pecans
- 2 jalapenos
- 6 tbsp mayo
- 6 tbsp greek yogurt
- 2 tsp dijon mustard
- 2 tsp apple cider vinegar
- 1 tsp salt
- 1 tsp garlic powder
- 1 tsp onion powder
Instructions
- Shred cooked chicken℉
- Chop celery, green onions, jalapenos, and pecans
- In a bowl combine shredded chicken, celery, green onions, jalapenos, pecans, and cranberries
- In a small bowl combine mayo, greek yogurt, dijon mustard, apple cider vinegar, spices and mix to combine
- Add the sauce the chicken and mix together
- Adjust seasoning s to your preference if needed
- Enjoy on bread or wrap, or as a dip with veggies and crackers
