I had never made tomato soup before, but my garden is overflowing with tomatoes so it was time to learn. I was surprised how easy and delicious this soup came together and I have never had a better-tasting tomato soup! This creamy soup is simple to make, high in protein, gluten-free and dairy-free.

Creamy Roasted Tomato Soup is made with:
- Roma tomatoes: I have used Roma and grape tomatoes, but any tomato can work
- Red pepper: add one bell pepper for a sweet and smoky flavor
- Onion: use a sweet onion for a caramelized sweet taste
- Bone broth: I like to use bone broth to add protein to this soup, however, any veggie or chicken broth will also work
- Coconut milk: keeping this recipe dairy-free by using canned coconut milk to add the creaminess
- Basil: use fresh basil if you have it on hand
- Herbs and spices: a mix of oregano, paprika, salt, and pepper
Recipe Tips:
- Make this soup vegan by using veggie broth instead of bone broth
- Use canned coconut milk to add creaminess to the soup (regular or light will work)
- Use a blender or food processor to blend veggies and spices. You may need to blend in two batches to fit all ingredients
- If you have an immersion blender you can skip the blender or food processor and add to a pot and blend with an immersion blender instead
- Add red pepper flakes for a kick of heat

Ingredients
- 3 lbs roma or grape tomatoes
- 1 red bell pepper
- 1 sweet onion
- garlic (optional)
- 2 cups chicken bone broth (can subsitute for veggie or chicken broth0
- 1/4 cup coconut milk
- 1/4 cup loosely packed basil leaves
- 1 tsp oregano
- 1/4 tsp paprika
- salt and pepper to taste
Instructions
- Preheat oven to 400 degrees
- Chop tomatoes in half
- Chop onion and red pepper
- Add veggies to a lined baking pan
- Spray veggies with oil and roast at 400 for about 35-40 minutes
- Once veggies are roasted transfer to a blender (or food processor) with remaining ingredients and blend until smooth
- Add soup to a pot and simmer until warm and enjoy
