Funfetti cookie dough protein bites are healthy cookie dough bites that are grain-free, dairy-free, and high in protein and fiber.


You know I love making healthier treats that are blood-sugar balancing and made with simple real food ingredients. No one will know that the main ingredient in this healthy vegan cookie dough is white beans and who doesn’t love rainbow sprinkles to add some fun! 

Funfetti Protein Cookie Dough
  • Funfetti cookie dough bites are gluten-free and grain-free
  • Refined sugar-free, vegan, plant-based,  and dairy-free
  • They only take about 15 minutes to make 
  • You can eat the cookie dough by the spoonful 
  • Filled with fiber and protein 
  • A blood sugar-balancing treat or snack 
  • White beans: high in fiber, protein, and nutrients including magnesium, iron, folate, copper, and phosphorus, and gives these bites a great cookie dough texture
  • Cashew butter: Excellent source of healthy fats, selenium, and antioxidants
  • Coconut flour: a low glycemic index, high in fiber, and gluten-free flour to thicken the dough
  • Vanilla protein powder: adds a healthy source of protein
  • Honey: for a little sweetness
  • Vanilla extract: adds the funfetti flavor
  • Almond extract: adds the funfetti flavor

The protein and fiber in this cookie dough will help to stabilize blood sugar and give you lasting energy.

Recipe Tips:

  • Cashew butter can be swapped for almond butter
  • Use a cookie dough scoop to make evenly sized balls
  • Also can just eat the dough by the spoonful or as a spread
  • Swap out the honey for another liquid sweetener if you don’t eat honey
  • You can use great northern bean in place of the cannellini beans  
  • I like to use sprinkles that are dye free such as these

Ingredients
  

  • 1 can of drained and rinsed cannellini beans
  • 1/2 cup cashew butter
  • 1/2 cup coconut flour
  • 1/2 cup vanilla protein
  • 1/4 cup honey
  • 1/2 tsp vanilla extract
  • 1/2 tsp almond extract
  • rainbowl sprinkles

Instructions
 

  • Drain and rinse cannellini beans
  • Add white beans, cashew butter, coconut flour, vanilla protein,  honey, almond extract,  vanilla extract, and salt to a food processor
  • Mix in a food processor till it forms a dough
  • Add sprinkles to dough and stir with a spoon
  • Scoop with a cookie dough scoop to form balls and place on a tray and let set in the freezer for about 5 minutes to firm up
  • Store cookie dough protein bites in the freezer or the fridge in an air-tight container
