Sugar cookies hold a special place in my heart from years of decorating cookies with my mom.  However, these cookie dough protein bites taste just as good and are a whole lot healthier and easier to make!  Sugar cookie dough protein bites are grain-free, vegan, and blood sugar-balancing dessert or snack. They taste just like the original sugar cookie dough you weren’t supposed to eat! You can whip up these healthy, gluten-free, dairy-free sugar cookie dough bites in about 10 minutes and enjoy them as an afternoon snack or sweet treat.

Recipe Tips:

  • Use a cookie dough scoop to make evenly sized balls
  • Swap out the honey for another liquid sweetener if you don’t eat honey
  • I like to use sprinkles that are dye-free such as these

Sugar Cookie Dough Protein Bites

Ingredients
  

  • 1 cup cashew butter
  • 1/4 cup honey
  • 1/2 cup coconut flour
  • 6 tbsp vanilla protein
  • 1/2 tsp salt
  • 1/2 tsp vanilla extract
  • 1/2 tsp almond extract
  • sprinkles

Instructions
 

  • Add all ingredients except for the sprinkles to a mixing bowl
  • Mix with a spoon to combine until it forms a dough 
  • Stir in sprinkles
  • Let dough sit for a few moments to thicken 
  • Scoop with a cookie dough scoop to form balls or roll into balls
  • Store in the freezer
