You don’t need a special occasion to celebrate with these healthy funfetti protein bars. This recipe is naturally gluten-free, vegan, paleo, refined sugar-free, grain-free, and dairy-free making it a treat everyone can enjoy. These funfetti protein bars are fudgy, sweet, and taste jut like funfetti batter but without the excess butter, flour, and sugar. You will enjoy these homemade protein bars as a midday snack or a dessert.

Funfetti Protein Bars are made with:

  • Cashew butter : Made with natural cashew butter the only ingridents are cashews and salt
  • Coconut flour: A high in fiber and grain-free flour
  • Vanilla protein: For a protein boost and a little extra sweetness and flavor 
  • Maple Syrup: Just a little maple syrup for a hint of sweetness
  • Rainbow sprinkles: I like to use rainbow sprinkles that are dye free
  • Almond extract: just a little to get the true funfetti flavor
  • Vanilla extract: just a little get that funfetti flavor
  • Sea salt: Helps to bring out all the flavors 

Healthy Funfetti Protein Bars

Recipe Tips:

  • Makes 8 full-size protein bars or 16-32 snack-size treats depending on what size you cut them into
  • These can also be made into balls instead of bars by scooping with a cookie dough scoop or rolling into balls
  • The key is to use a vanilla protein powder you like the taste of and enjoy. Here are a few of my go-to protein powders
  • I like to use sprinkles that are dye free. I used these for this recipe.
  • You can replace the maple syrup with any liquid sweetener
  • You can replace the coconut flour with oat flour but it will result in a softer texture and you will need 2-3x more oat flour than coconut flour 
  • Make sure to use cashew butter that is made of only cashews and salt for good consistency. I often buy mine from Trader Joes.
  • Store in fridge or freezer in an air-tight container depending on the consistency you enjoy
  • Stays fresh in the fridge for up to 5 days and in the freeze for up to 3 months

Funfetti Protein Bars

Servings 18

Ingredients
  

  • 1 cup cashew butter
  • 1/2 cup vanilla protein
  • 6 tbsp coconut flour
  • 1 tbsp maple syrup
  • 1/2 tsp salt
  • 1/2 tsp vanilla extract
  • 1/2 tsp almond extract
  • rainbow sprinkles

Instructions
 

  • Add all ingredients except for the rainbow sprinkles in a mixing bowl
  • Mix until it forms a dough
  • Stir in rainbow sprinkles leaving a few to put on top
  • Line a loaf pan with parchment paper
  • Spread and press down dough evenly in loaf pan
  • Add rainbow sprinkles on top and press down with a spoon
  • Freeze and then slice into bars
  • Store in the freezer and enjoy!
