Lemon Cream Smoothie
Hello, sunshine in a glass! This lemon cream smoothie is refreshing, gluten-free, vegan, and packed with protein and fiber but tastes like a creamy slice of lemon pie.
Ingredients
- 1 cup light canned coconut milk
- 1 scoop vanilla protein
- 1 small frozen slightly green banana
- 3/4 cup frozen riced cauliflower
- 1 large lemon for juice and zest (3-4 tbps)
- 1 tsp vanilla extract
- 1/2 tsp turmeric (optional for yellow color)
- water and ice as needed
Instructions
- Peel, slice, and freeze bananas that are still somewhat green to keep them from having an overpowering banana flavor
- Add coconut milk, vanilla protein, vanilla extract, juice and zest from a lemon, frozen green banana, frozen riced cauliflower, and water and ice as needed to a blender
- Blend until smooth and creamy adding ice or more liquid if needed
