Mint Chocolate Chip Smoothie

This mint chocolate chip smoothie is a healthy, high-protein breakfast that tastes like ice cream but is filled with nutrients and veggies!


Do you like ice cream? I was the child who preferred ice cream to cake, growing up. Dad and I always shared a love for mint chocolate chip ice cream, so I decided to recreate that favorite flavor into a smoothie.

This smoothie has one of my favorite veggies hidden inside—zucchini! You may have not tried it before, but zucchini is one of my favorite veggies to put in smoothies. Everyone puts spinach, kale, and cauliflower in smoothies but forgets about zucchini. Zucchini and yellow summer squash are low in calories, tasteless, and add volume and nutrients to any smoothie.

Recipe Tips:

  • I like to use one scoop of collagen peptides and 1/2 scoop of vanilla or chocolate protein of choice instead of 1 scoop of protein.
  • Substitute coconut butter for your fat source of choice: either avocado, coconut oil, or MTC oil.
  • This smoothie is THICK and creamy so I often need to add more liquid to get it moving I add water or more milk as needed. Also, you can pause and stir with a spoon to get moving.
  • This recipe can be adjusted to your liking; I switch up my healthy fat source with what I have on hand. Adding avocado makes it extra creamy, but if you haven’t ever had coconut butter, I highly suggest giving it a try. Coconut butter is great in smoothies, on oatmeal, on top of dark chocolate, and by the spoonful.
  • I buy the Costco-size squash and zucchinis, and whatever isn’t used for lunches or dinners makes its way into my smoothies. I like to steam zucchini and then freeze it in small chunks to use for smoothies. You can also find frozen, sliced zucchini or a zucchini-and-yellow-squash blend in the freezer section and keep it on hand to add to smoothies.

Ingredients
  

  • 1 cup milk plant-based
  • 1 tbsp chia seeds optional
  • 1 tbsp cacao or cacao powder
  • 1/2 tsp mint extract
  • 1 scoop protein powder*
  • 1-2 tbsp coconut butter**
  • 3/4 cup zucchini slices frozen
  • 1/2 banana frozen and sliced
  • 1/2 cup baby spinach frozen
  • ice as needed
  • cacao nibs or mini chocolate chips for topping optional

Instructions
 

  • Add ingredients to the blender in the order listed and blend 'til smooth and creamy.
  • Add more liquid as needed to help it blend. Also, you can pause and stir with a spoon to get it moving.
  • Dish up and enjoy!
