Peanut butter cookie dough protein bars take less than 10 minutes to make and only need a few simple ingredients. These homemade protein bars are naturally grain-free, gluten-free, vegan, and taste like cookie dough!

Making homemade protein bars is super simple and affordable versus buying store-bought. They store easily in the freezer and are a meal prep dream.

Recipe Tips:

  • Makes 8 full-size protein bars or 16-32 snack-size treats depending on what size you cut them into
  • Allergic to peanut butter? Feel free to substitute with different nut butter or use sun butter to keep it nut-free
  • You can substitute chocolate chips with cacao nibs for extra superfoods
  • These can also be made into balls instead of bars by scooping with a cookie dough scoop or rolling into balls
  • The key is to use a vanilla protein powder you like the taste of and enjoy. Here are a few of my go-to protein powders
  • You can replace the maple syrup with any liquid sweetener
  • You can replace the coconut flour with oat flour but it will result in a softer texture and you will need 2-3x more oat flour than coconut flour 
  • Make sure to use peanut butter that is made of only peanuts and salt for good consistency  
  • Store in fridge or freezer in an air-tight container depending on the consistency you enjoy
  • Stays fresh in the fridge for up to 5 days and in the freeze for up to 3 months

Ingredients
  

  • 1 cup peanut butter
  • 1/2 cup vanilla protein
  • 6 tbsp coconut flour
  • 1 tbsp maple syrup
  • 1/2 tsp salt
  • 3 tbsp mini chocolate chips

Instructions
 

  • Add all ingredients except for the chocolate chips in a mixing bowl
  • Mix with a spoon to combine until it forms a dough
  • Stir in chocolate chips leaving a few to put on top
  • Line a loaf pan with parchment paper
  • Spread dough evenly in loaf pan and add the rest of the chocolate chips
  • Freeze and then slice into bars
  • Store in the freezer and enjoy!
