Ingredients
  

  • 1 cup cashew butter
  • 1/2 cup vanilla or cinnamon protein powder
  • 1/4 cup coconut flour
  • 1/4 cup maple syrup
  • 1 tbsp cinnamon
  • 1/2 tsp salt

Topping

  • 1 tbsp monk fruit or sugar
  • 1/2 tsp cinnamon

Instructions
 

  • Add cashew butter, protein, coconut flour, maple syrup, cinnamon, vanilla, and salt in a mixing bowl
  • Mix ingredients until it forms a dough and let sit for a few moments to thicken up
  • Use a cookie dough scoop or roll into balls and place on a lined baking tray
  • Mix monk fruit (or sugar) and cinnamon in a small dish
  • Roll each ball in the mixture then place the cookie dough bite back on the tray
  • Play tray in the freezer for cookie dough bites to harden
  • Store in fridge or freezer
